Spanish cheesemaker Lorenzo Abellan established his Murcia queseria in 1978, and today shepherds a flock of around 350 Murcian goats. Importer Michelle Buster of Mitica/Forever Cheese, who specializes in Mediterranean cheeses & accompaniments, ‘discovered’ Cana de Oveja, and today it is one of her company’s most popular cheeses. "Cana de Oveja" literally translates to "cane of sheep”, and was inspired by the French 'bucheron' style – think of a brie type cheese in the shape of a log, rather than a wheel. This beautifully rustic cheese exhibits a gooey creamline beneath its flavorful rind, and a firm and dense ivory-colored center. Aromas of earthy mushroom invite, as the cheese coats the palate, leaving bold, tangy & lactic flavors with a hint of white pepper on the finish.
