Sid is a fourth-generation master cheesemaker of this Wisconsin business that is over 100 years old. Officially Founded in 1902 (though the family has been making cheese since 1883), today it comprises 4 plants & 8 cheese shops. A mixed-milk cheese, of blended cow, goat & sheep milks – hence the playful name: Menage. Within its distinctive kelley green wax rind, goat milk brings brightness, cow milk delivers rich butteriness, and sheep milk adds palate-coating richness. Young, wet, semi-soft, almost farm-style cheese, Menage presents like a very young cheddar. Menage is creamy, tangy, and smooth with a finish that is slightly dry and tart; and a fresh, milky aroma.
